Even if we walk into the Thanksgiving holiday shoulders squared and game face on, swearing that we won't buy or prepare enough food for an army when there will only be a small gathering of people, we fail. And then, we end up with mounds of leftover turkey that we become nauseated just looking at.

There are only so many turkey sandwiches a person can eat before they get turned off to the idea of swallowing another one.

Search the internet and you'll discover a bunch of suggestions of what to do with leftover Thanksgiving foods. There are soups and casseroles and everything in between. And then, there's this - Thanksgiving leftovers egg rolls. That's right. Thanksgiving leftovers egg rolls.

I have to give all credit to my husband for coming up with this which was born after I told him all about the unbelievable Ruben egg roll from the Belmar in Binghamton that I'd plowed through. My husband figured if a Ruben can be made into an egg roll, why not try the same with Thanksgiving leftovers and so, he did, and we were not disappointed.

Thanksgiving Egg Rolls Ingredients

Egg roll wrappers (look for the bigger ones because they're easier to stuff and fold)
Leftover turkey, shredded
Leftover mashed potatoes
Leftover cranberry sauce
Leftover stuffing
Leftover corn (optional)
Leftover green bean casserole (optional)
Leftover gravy
A small dish with a bit of water in it (for sealing your egg roll)

How to Make a Thanksgiving Egg Roll Step One:

Place a single egg roll wrapper on a (clean) surface and spread a thin layer of cranberry sauce. Next add some mashed potatoes, stuffing, turkey, and whatever other ingredients you've got lying around. I've got to say, I don't even like cranberry sauce but it tastes amazing in those egg rolls. Don't go too crazy with the amount of stuff you put on the egg roll wrapper though because you still have to roll and seal the whole thing.

How to Make a Thanksgiving Egg Roll Step Two:

Turning the egg roll wrapper so that it's facing you looking like a diamond, fold up the bottom half and then tightly fold in the sides. Then, roll and seal it up with a couple of drops of water. Keep doing this until you've got as many egg rolls as you want to cook.

How to Make a Thanksgiving Egg Roll Step Three:

Heat about an inch of oil in a large pan on medium heat until it starts to snap. Carefully drop in the egg rolls that you made and fry them for about a minute (may a bit more) on each side until they're a beautiful golden brown. Once your egg rolls are golden brown, carefully remove them from the pan and set them on a paper towel-lined plate to drain some of the oil. Note: you can make these in an air fryer, cooking until they're golden brown, but they don't quite taste the same. If you opt for the air fryer, create your egg roll as explained above but then brush your egg roll with oil and cook for about eight minutes (turning halfway through) at 400 degrees.

How to Make a Thanksgiving Egg Roll Step Four:

Your egg roll will look so delicious that you'll be tempted to shove it into your mouth, but you really need to wait a minute or two because everything you stuffed inside is going to be bubbly hot. Heat up your leftover gravy and use that for dipping!
