I love pumpkin pie...hold the crust. So, when I was given a recipe for pumpkin custard, I was thrilled! In the last few years, I've changed it to taste.

For those that aren't pie fans, but may like custard, this is a good fluffy holiday dessert alternative.

A bonus idea with this recipe is adding pecans or other nuts.

Simple Pumpkin Custard

Ingredients:

2 cans pumpkin

4 egg whites (whipped)

1 cup sugar

dash of salt

2 1/2 tsp cinnamon

2 1/2 tsp nutmeg

whipped topping

1. Preheat oven to 350.

2. Set aside 1/2 tsp nutmeg and 1/2 tsp cinnamon in a small bowl.

3. In a large mixing bowl add pumpkin, salt, sugar, cinnamon and nutmeg. Hand mix well.

4. Fold in egg whites.

5. Pour mixture into ramekins or bowls and bake for about 35-40 minutes or until fork comes out clean.

6. Let cool.

7. When ready to serve, sprinkle with remaining cinnamon and nutmeg and top with whipped topping.
