My Dad has been getting a lot of visitors lately. One of them, a dear friend of his, came bearing a delicious casserole.

She told my sister it is a favorite of hers to make for neighbors in need and community pot luck dinners. All I know is, it was heaven!

This has a holiday feel to it thanks to the stuffing, so it could come in handy during entertaining or even as a holiday gift.

 

 

Chicken and Stuffing Casserole:

Ingredients

1 whole chicken
1 pint sour cream
1 can mushrooms (drained)
1 can cream of mushroom soup
1 package stuffing (cornbread stuffing is best)
1 stick of butter (melted)
1 cup chicken broth

Boil the chicken in a pot of water, cool and cut off the bone. Mix chicken, sour cream, mushrooms and cream of mushroom soup in large owl. Spread thin in large casserole pan. Prepare stuffing. Mix stuffing with melted butter and broth. Spread stuffing mixture over chicken mixture.

Bake at 350 degrees for 45 minutes.
