Strawberry B-B-Q Sauce (prep. time about 15 minutes. Yields up to 6 servings)

(It sounds a little different. But trust me on this one.  The strawberries replace traditional molasses as a more subtle sweetener while imparting a slight fruity note.)

1 C. strawberries with the caps cut off

1/4 C. finely diced onion

1/4 tsp. red pepper flakes

2 Tb. red wine vinegar

1/2 C. Ketchup

3 Tb. honey

Put the strawberries and diced onion in a sauce pan and add just enough water to almost cover.  Bring to a boil and reduce heat to a medium to fast simmer.  Stir occasionally to help the strawberries break down.  Continue to simmer until the sauce is reduced by about a third.  Add in the red pepper flakes and ketchup.  Add the vinegar a little at a time to control the tartness. Stir in the honey, also a little at a time to balance the sweetness.

Can be brushed over chicken, shrimp on a skewer or pork chops.
