Quinoa with Zucchini, Squash and Spinach

I used a box of quinoa from Far East and followed the directions on the back as quinoa is very hard to make! If you are up for the challenge and have time to make it yourself, go for it by all means.

While the quinoa was cooking, I cut a large zucchini and yellow squash into thick slices and then cut those in half. I put the vegetables in a deep frying pan with sea salt, pepper, and oil to fry until they were soft.

After both the quinoa and the vegetables were done cooking, I combined them in a bowl with spinach and hot sauce to create my dish! You can throw in as much or a little spinach and hot sauce as your heart desires but I tend to like it hot! Enjoy!
