Recipe of the Week: Eggplant Parmesan
Eggplant Parmesan
Ingredients:
Eggplant
Eggs
Bread crumbs
Sauce
Mozzarella cheese
Olive oil
Directions:
1. Preheat the oven to 350 degrees.
2. Spray a glass or tin brownie pan with olive oil cooking spray.
3. Slice eggplant horizontally into thin slices.
4. Heat olive oil in a shallow frying pan, putting enough oil in the pan so it is about half an inch up the pan all the way around.
5. Break 3 eggs into a bowl and whisk.
6. Pour breadcrumbs in a separate bowl.
7. Dip a slice of eggplant into the egg batter, then into the breadcrumbs making sure you get both sides.
8. Place the covered eggplant slice in oil and cook until light brown before removing to a plate.
9. Dip the rest of the eggplant slices into the egg, breadcrumbs and oil.
10. Line the bottom of your baking pan with slices of eggplant, then pour a layer of spaghetti sauce over the eggplant.Repeat this until the eggplant is gone.
11. Put desired amount of mozzarella cheese on top and place in the oven for 30 minutes or until cheese it browned.
12. Remove, let cook, slice and enjoy!
