Growing up, I lived in a home without any air conditioning. It got brutal, kind of like it is this week. We were all sluggish and my Mom did not want to cook!

Her solution was low to no cook recipes. Ingredients of choice included tuna, greens, fruit, shrimp, pasta noodles, eggs and tomato. Although she has recipes written out, I don't have them and I improvise.

There are a couple ways to go here. I would start with a salad or pasta base and work from there. Add whatever you want.  Cold cut meats and cheeses are always good. Don't forget herbs and spices to add a little flair.

Side dishes can be bought. Macaroni and potato salads are always the favorites.

Here's the only recipe I can share. Luckily it is in my head as my Grammy and I made it together every summer.

Grammy's Concoction (family of 4)

Boil up a box of pasta noodles. We liked elbows. Rinse with cold water.
Boil 6 eggs, then slice into cubes.
Mix 2 to 3 cans of tuna with mayo, add paprika to taste.

Mix all ingredients and add mustard and chopped celery to taste. Blend with mayo. Add 2 to 3 cans of mini shrimp. Serve over a bed of lettuce and tomato.

This happens to be one of my big comfort foods. The shrimp are a nice touch. Have fun being creative in the hot weather!
