The grand opening of the long-awaited Perkins Restaurant and Bakery in Tioga County is scheduled to occur in less than two weeks.

Beth Ann Smith, whose company will operate the establishment, said the business will officially open on July 24.

The restaurant is located next to the Comfort Inn on Route 434 in Apalachin.

Speaking on WNBF Radio's Binghamton Now program Thursday, Smith said more than 100 people have been hired to work at the restaurant.

The management team for the Apalachin eatery has been undergoing training at a Perkins facility in recent weeks. Training for other restaurant workers is to start next week.

Smith announced plans for the business last July. She had hoped the restaurant could be in operation by early this year but bad weather and other issues delayed work on the project.

The restaurant, which is near the Apalachin exit off Route 17, will be open 24 hours a day. It's located next door to the Blue Dolphin Diner.

Smith said her company, Rajumaanar Enterprises, may consider opening other Perkins restaurants elsewhere in the region.
