The building that will house a new Perkins Restaurant and Bakery in Tioga County is taking shape.

Construction workers have made significant progress in recent weeks at the site off Route 434 in Apalachin.

The restaurant is being built next to the Comfort Inn, which opened in 2013. The site is just west of the Blue Dolphin Diner.

The Perkins project is being developed by Rajumaanar Enterprises. Company president Beth Ann Smith said construction is "moving along very well as we continue to dodge the occasional heavy snow."

Smith said the framed walls are up and the steel for structural supports was delivered on Friday. The specially-fabricated roofing for the future 4,800-square-foot restaurant is expected to arrive soon.

Local hiring for the business is to start at the end of March. The restaurant is expected to employ more than 50 people. The grand opening is expected to occur at the end of April.

The general manager for the new Perkins has been undergoing "extensive training" in Bethlehem, Pennsylvania. Smith said several other junior managers will start their training shortly.
